The Totapuri mango, also known as Ginimoothi (meaning "parrot face" in Kannada), is a popular cultivar originating in South India. Renowned for its versatility, it can be enjoyed both green and ripe, offering distinct taste and textural experiences at each stage.

1. Appearance: Stands out for its unique oblong shape with a tapered and pointed tip, earning the parrot face comparison. The skin is thick, smooth, and tough, transitioning from green to shades of yellow-green, solid yellow, or sometimes with a red-pink blush as it ripens.

2. Texture & Flavor: Unripe Totapuri mangoes have a crisp, almost crunchy texture with a green, grassy, and tart flavor. As they ripen, the flesh softens slightly, retaining a pleasant bite. The flavor profile develops into a sweet, acidic, and tangy mix with floral nuances. Unlike some mango varieties, Totapuri flesh is known for being nearly fiberless and very pulpy. The skin is edible and has a very mild bitterness.
